2 sity hone ke bad Thanda kar le, suran pur tarah se thanda hone ke bad uske
pure chilke ko nikal le aur tukdo me cut kar le. medium tukdo me cut kar le.
aur dhup me thodi der masala bnane tak rakh de. (ya fir pankhe ke niche bhi
rakh sakate hai)
3. uske bad
sabji ke liye masala bnane ke liye sabse pehle kadhai me thodasa oil dale, aur
jeera adarak lahsun, barik kate huye pyaj, dhaniya patti, ek se 2 hari mirch,
til ya mungfalli ke dane, aur sabhi ko achhese bhun le, bad me uper se khas
khas dale aur use bhi sabhi ke sath achhese bhun le. aur Thanda hone ke bad
sabhi ko mixer me piskar uska paste bna le.
4. baad me
kadhai me oil dale. (Suran ki sabji ke liye oil ka jyada use hota hai. kyuki
suran ke pisses ko hame talna bhi hai) oil garam hone ke bad suran ke pises ko
thode thode kar ke tal le. golden hone tak suran ke pises ko tal le.
5. uske baad
usi kadhai me sabji bnane ke liye, sabse pehle oil me tejpatta dale. Baad me
rai aur jeera dale. Aur humne jo masala bnaya hai wo dale, aur golden brown
hone tak masala ko pka le. masala achhi tarah se oil chutne tak pkne de.
6. Uske baad
masala puri tarah pakne ke bad usme 3 se 4 tamatar dale. (jitni aap sabji bna
rahe hai uske anusar dale) baad me namak dalkar tamatar soft hone tak pakne de.
Baad me lal mirch powder, haldi powder, masala (jo aap use karte ho wo dale)
dhaniya powder, aamchur powder (humne tamatar ka bhi use kiya hai use dhyan me
rakhte huye aamchur powder dale) aur sabhi ko achhese mix kar le.
7. baad me
masala ko achhi tarah se pka le. uske baad pani dalkar gravy aur acchhese bhun
le. aur uske baad suran ke pisses dalkar achhese mix kar le. aur masalo me
suran ko aur thodi der bhun le aur thodi der dhak kar rakhe.
8. uske baad
sabji me jitni apko gravy chahiye utna pani dale aur thodi der pka le. sabji me
ubal aane ke baad usme dhaniya patti dale aur uper se nimbu ka ras dale. aur
achhese mix kar le.
