Humne aajtak anek prakar ki thali dekhi hai. jisme rajsthani thali,  gujrati thali, maharastrian thali, south Indian thali, aise anek rajyo ki vishes khadya samgree ko bhi pradrshit karti hai. lekin bat jab upwas thali ki aati hai, to hum sab soch me padte hai ki aisa kya khash bnaya jaye taki bhagwan ki pooja ke sath sath hamare ghar ke sabhi logo ko kuch alag prakar kush rakha jaye.

*1) Sabudana khichdi:-

1. bhigoya sabudana

2. hari mirch

3. kadipatta

*Sabudana ke fayde*

* Sabudana blood sugar ko niyantrit rakhne me bahot faydemand hota hai. isme paye jane wale fiber ke matra ke karan pachan ki samashya ke liye sabudana bahot faydemand hota hai. isliye sabudana ko aap kabhi kabhi thodi matra me kha sakte ho. Is se sugar aur motapa se chutkara paya ja sakta hai.

* sabudana blood ki kami hone se bachne me madat karta  hai, isliye sabudana ka sevan haemoglobin ki kami ko dur karta hai. anemia jaise rogo ke liye bhi sabudana ka sevan bahot faydemand hai.

*Bhagar ke fayde*

* bhagar ka upyog upwas me alag alag tarah ke dishesh me kiya jata hai. jaise ki, bhagar ka upma, bhagar ka dosa, bhagar ke paratha, or bhagar ke chawal. Bhagar se upwas ke dishesh to bnti hi hai, iske sath sath bhagar hmare swasth ke liye bhi bahot faydemand hai. to chaliye dekhte hai bhagar khan eke fayde.

* bhagar me bharpur matra me iron paye jate hai. jis ke vajah se bhagar ka sevan karne se body me iron ki matra ko pura kiya ja sakta hai. anaemia se pidit rogiyo ke liye bhi bhagar ka sevan karna bahot faydemand hai.

*Singhade ke aate ke fayde*

* singhade me paye jane wale iodine, magnise , jaise nutritients paye jate hai. isi ke sath singhade ke aate me protine , fiber, carbohydrate, sodium, vitamin A, citric acid, vitamin C, potassium, zinc, iron, phosphorus, jaise anek prakar ke nutritious values paye jate hai. jis ke karn hmare health ke liye singhade ke aate ka sevan karna bahot hi faydemand hai.

*Upwas special thali banane ka samay*

           50 se 60 minuts.

*Upwas special thali banane ki vidhi*

* Purv tyari*

1. sabse pehle sabudana ko 3 se 4 bar dhokar dahi dalkar mix kar le. Aur rat bhar bhigoke rakhe. (5 se 6 ghante bhi rakh sakte hai)




2. upwas ka dosa banane ke liye, ek katori bhagar aur 3 se 4 chammach (aadhi katori) sabudana bhigoke rakhe. ( 3 se 4 ghante bhi rakh sakte hai)



*Upwas ka mattha*

1. sabse pehle mattha bnane ke liye, oil ko garam hone de aur jeera, kadipatta, hari mirch dale aur golden brown hone de.

2. uske bad dahi ya tak dale. Dahi me pani milakar dale. Aur gas ko off kar de. Aur fir namak aur chini dalkar mix kar le. (agar aap kala namak use karna chaho to kar sakte ho, uska taste bhi mattha me bahot achha lgta hai.

3. ab apko jitni quantity me mattha banana hai, utna pani dale. Aur achhese mix kar le.







*Aalu ka halwa*

1. aalu ka halwa bnane ke liye sabse pehle uble huye aalu ko achhese mash kar le, aur uska paste bna le.

2. uske bad kadhai me ghee dalkar mash kiye huye aalu ka paste dale. Aur mix karke achhese bhun le.

3. chammach chalate rahe. Jab tak aalu soft na ho jaye, tab tak bhun le.

4. ab chini dale. (apko jitna aalu ka halwa bnana hai, usi hisab se chini dale. Aur thoda colour change hone tak bhun le.

5. ab elaychi powder dalkar achhese mix kar le. Or thodi der bhunte rahe.

6. ab jo dryfruits apko pasand ho wao dale aur achhese mix kar le. Aur kadhai chutne tak halwa pkne de.

Aalu ka halwa bnkar tyar hai.














*Aalu ki sabji*

1. aalu ki sabji bnane ke liye, uble huye aalu ko cut kar le. Oil garam hone ke bad, jeera, kadipatta, hari mirch dale.

2. golden brown hone ke bad aalu dale. Aur achhese mix kar le. Aur aalu ko soft hone de.

3. namak aur bhuni hui mungfalli ka powder dalkar achhese mix kar le.

4. uper se kali mire ka powder dale aur nimbu ka ras dalkar mix kar le.

Upwas wali aalu ki sabji tyar hai.















*Sabudana khichdi*

1. sabudana khichdi bnane ke liye, sabse pehle kadhai me oil garam kare, oil garam hone ke bad jeera, hari mirch, aur kadipatta dale. Aur golden brown hone tak wait kare.

2. ab uble huye aalu dale, namak aur thodisi chini dalkar achhese mix kar le.

3. ab bhigoya huwa sabudana dalkar achhese mix kar le. Aur kali mire ka powder dhak kar thodi der pakne de.

4. uske bad bhuni hui mungfalli ka powder dale. Aur mix kar le, aur dhak kar thodi der sabudana soft hone tak pakne de.

5. bich bich me mix karte rahe.

Sabudana ki khili khili khichdi tayar hai.



















*Mungfalli ki chutney*

1. upwas wali mungfalli ki upwas wali chutney bnane ke liye, ek katori me bhuni hui mungfalli ka powder le.

2. usme dahi dale. (ap apne hisab se kum ya jyada dal sakte ho)

3. ab namak aur chini aur thodasa lal mirch powder dalkar achhese mile le.

Upwas wali mungfalli ki chutney tayar hai.








*Sabudane ke vade*

1. sabudana ke vade bnane ke liye, sabse pehle ek bowl me bhigoya huwa sabudana le. Aur usme jeera, barik kata huwa kadipatta, hari mirch, namak , chini, nimbu ka rus aur uble aalu dalkar mix kar le.

2. bhuni hui mungfalli ka powder aur singhade ka aata, ya jo bhi aata ap upwas me khate ho, wo aata dale, aur mix kar le.

3. ab chote size ke boll bnakar halke hatho se press kare or ek ek karke vade bana le.

4. kadhai me oil garam kar le, or eke k karke vade bnakar dale.

5. golden brown hone tak vade ko pkne de, aur dono side se pka le.

6. medium flame pe vade ko achhse pka le.

Sabudana vade bankar tyar hai.


















*Upwas ka dosa*

1. upwas ka dosa bnane ke liye, ek bowl me humne jo bhagar aur sabudana bhigokar rakha tha uska mixer me paste bna le. Aur pani dale.

2. ab usme singhade ka aata dale. Namak aur jeera dalkar achhse mix kar le.

3. ab thodasa dahi ya nimbu ka ras dale. Aur achhese mix kar le.

4. pan ya tawe par oil lgakar batter dalkar achhese faila de.

5. bad me dhak ke rakhe. Aur thodi der bad khol ke dose ko palat de. Dusri side se bhi dose ko palat de.

Aasan tarike se upwas ka dosa bnkar tyar hai.
