*Vidarbha Style Bhakri Recipe With Tomato Garlic Chutney : Ghar ki yaad dilaye*
Bhakri, ye Bhartiya khadya Sanskriti ka ek pramukh bhag hai, Aam taur pe Bharat ke alag alag part me ye alag alag nam se jane jate hai. Bhakri ye ek aisi dish hai, jo Maharashtra me bhakri banana ke alag alag tarike dikhai dete hai.
Bhakri ko Nutrition ki drushti se body ke liye nutritious Aahar mana jata hai.
*Bhakri banane
ke liye Ingredients:-
1) Jwari ka
aata (ya Multigrain aata) 2) pani(water)
3) Gehu ka
aata 4) Namak
*Tomato
Garlic Chutney banane ke liye Ingredients:-
1) Tomatoes
2)Jeera 3)Lahsun 4) Dhaniya patti
5) Hing 6)
Oil.
*Nutritious Values Of Bhakri & Tomato Garlic Chutney:->
*Bhakri : Bhakri banane ke liye Jwar ke aate ka upyog kiya jata hai ya fir aap uski jagah
multigrain aata bhi le sakte ho. Gehu ke aate ke badle Jwari ka aata ya in
sabhi se achha multigrain aata hamare body ko jyada benefit deta hai. Isme
Jyada matra me Iron, Fibres, Carbohydrate aur proteins hota hai.
Bhakri banane
ke liye Jwar ke aate ka upyog hum karte hai, Jwar ke aate ke tasir thandi hoti
hai is vajah se hm ise aasani se diet me shamil kar skte hai.
*Jwar ke aate ke Fayde:-
*Healthy digestion :- Jwar ka sevan sahi matra me karne se pachan Shakti
Swasth tarike se kam karti hai, Jwar me fibre bharpur matra me paya jata hai,
isiliye ache digestion ke liye Fibre ka Sevan karna jaruri hai. Aap expert ke
advice se Jwar ko apne diet me shamil kar skte hai.
*Weight Loss:- Jwar ko apne diet me shamil karne se apka lambe samay tak pet bhara
bhara rahega, isiliye apko bar bar khana khane ki Jarurat nahi padegi is karan
apko weight loss karne me bhi fayda hoga.

*Tomato + Garlic Chutney :-
1) Tomato me Vitamin ‘C’, lycopene, Potassium, Folate, Vitamin ‘K’ or Vitamin ‘A’ jyada matra me paya jata hai Jo Cholesterol lev el ko kam karne me Saksham hai. Isiliye weight loss, sujan (inflammation) aur ghatak (harmful) blood clotting ko rokta hai jis karan hum lakhva ya brain stroke se khud ko protect kar sakte hai. Tomato me bharpur matra me Antioxidant aur Vitamin ‘C’ hota hai jo hamare Skin ko damage karne wale free radicals ko kam karta hai aur hame Sundar youthful skin ke saath young rakhne me help karti hai.
2) Garlic
(Lahsun) ye ek strong natural antibiotic, anti fungal aur antibacterial
herb(vanaspati) hai, garlic rogo ko thik karne ke liye bahot hi faydemand hai.
*Bhakri Aur
Tomato Garlic Chutney Banane ka samay:-
30 se 40 minutes
*Bhakri
banane ki Vidhi:-
1) Sabse pehle
ek bade katore me jwar ka aata or gehu ka aata le (aap multigrain aata bhi le sakte
hai. multigrain aata banene ki vidhi niche di gayi hai). Uske baad bich me
round bana le.
2) Baad me aata
ke matra anusar usme gamar pani dalkar achhi tarah se gunth le(mila le). Pani garam
hone ke karan ye process apko dhire dhire karani hai. Dhyan rahe aate ko chikna
or naram hone tak gunth le. Kyunki aate ko achhi tarah se gunthna bahot Jaruri
hai, nahi to bhakri banate samay bhakri Kinaro se tut sakti hai aur darare pad
sakti hai.
3) aate ki ek chhoti lohi bana le aur hatheli aur ungli ki madat se bhakri ko achhi tarah se flat bana le.
4) bhakri
banate samay thap Thapate waqt apko jwar ke aate
Ka upyog karna
hai, is karan bhakri chipkegi nahi.
5) bhakri ko
round shape me banane ke liye ek haath se dhire dhire thap thapaye aur dusra
haath kinare par rakhe.
6) Agar jarurat
ho to jwar ka aata bich bich me lagaye.
7) Ab tawe ko garam hone de garam hone ke baad bhakri ko tawe
par dale, aur hath ya gile kapde ki madat se bhakri ke upar pani dale. Agar aap
ise achhi tarah se dhire dhire dono side bhakri ko sekte ho to bhakri fulne lagegi
aur bahut soft s aur spongy bhakri bankar taiyar ho jayegi.
8) Ab apki
garma garam bhakri serve karne ke liye tayar hai.
Multigrain aata taiyar karne ke liye aap ko 2 kg gehu ka aata, 1 kg Jwar ka aata, 200 gm bajra, 50 gm kala chana, 50 gm ragi, 100 gm gehu ka jav, 1 tsp methi dana is matra me sabhi aanaj leke use pis le. Is tarah apse apka healthy aur easy digest multigrain aata taiyar ho gaya hai.
*Tomato Garlic Chutney Banane ki Vidhi :-
1. Sabse Pehle tomatoes ko tave par ya kisi bhi stand par rakh kar gas
pe kam aach par paka le.
2. Isi tarah lahsun ko bhi stand par rakh kar roast karna hai.
3. Iske sath hi hari mirchi ko bhi isi tarha stand pe rakh kar roast
karna hai.
4. Tomatoes, Lahsun(garlic) aur hari mirch ko Thanda hone de uske baad tomato ke upar ke chhilke nikal le.
5. lahsun ko bhi isi tarah chhilko ko nikalkar saf kar le.
6. Ek bowl me tomatoes ko achhi tarah mash kar le. Aap hath se bhi achhi
tarah se mash kar sakte hai.
7. Baad me mash kiye hue chutney pe bhaniya patti or namak dal de. Oil
ko garam kar usme jeera dalkar vah tadka chutney ke upar dal de aur use achhi
tarah mix kar le.
8. Is tarah hamari desi swad ki tomato garlic chutney taiyar ho chuki hai.
